FAO/WHO, 1984: Various edible oils and fats, margarine, processed cheese, etc., GMP; canned green beans, cold drinks, 100mg/kg; pickle, 300mg/kg; special cheese, 600mg/kg. EEC, 1990: Limited to vitamin A source, not intended for infant foods as pigments. GB 14880-94: Same as “01040, Vitamin A Oil”. According to the regulations of Japan (1998), they must not be used for kelp, meat, fresh fish and shellfish, whale meat, tea and seaweed, beans, vegetables, and sprouts. FDA, § 73.95, 2000: Limited to GMP.
What is β-carotene?
β-Carotene is an organic, strongly colored red-orange pigment abundant in plants and fruits. It is a member of the carotenes, which are terpenoids (isoprenoids), synthesized biochemically from eight isoprene units and thus having 40 carbons. Among the carotenes, β-carotene is distinguished by having beta-rings at both ends of the molecule. β-Carotene is biosynthesized from geranylgeranyl pyrophosphate
